When it comes to food, the Irish know a thing or two. And when it comes to potatoes, they really know their stuff! Colcannon potatoes are a traditional Irish dish made with mashed potatoes, kale or cabbage, and onions. They're simple to make, but oh so delicious!
Ingredients:
-1 pound potatoes, peeled and diced
-1/2 head cabbage, chopped
-1 onion, chopped
-3 tablespoons butter
-Salt and pepper to taste
-Milk (optional)
Instructions:
1. Boil the potatoes in salted water until soft.
2. In a separate pot, cook the cabbage and onions in butter until soft.
3. Drain the potatoes and mash them with the cabbage and onions.
4. Season with salt and pepper to taste. Serve warm, with a dollop of milk if desired. Enjoy!
