Ingredients:
4 large potatoes, peeled and diced
2 tablespoons olive oil
1 bunch of spring onions, trimmed and thinly sliced
1/4 cup chopped fresh chives
Salt and pepper to taste
Instructions:
1. Preheat the oven to 375 degrees F (190 degrees C).
2. In a large roasting pan, toss the potatoes with olive oil.
3. Add the spring onions, chives, salt, and pepper. Toss to mix well.
4. Roast in the oven for 30-40 minutes, or until potatoes are tender and golden brown. Serve immediately. Enjoy!
